Morning warm quinoa cereal

I make a big batch of this wonderful cereal to enjoy throughout the week. Makes 4-6 servings.

2 cups water or non-dairy milk of your choice

1 cup quinoa

1/2 cup chopped dried dates or cherries or prunes or raisins

2 T chia seeds

1/4 tsp each of cinnamon and vanilla extract

Bring water (or milk) and quinoa to a boil. Reduce to low and simmer for 15 minutes. Add the dried fruit, chia seeds, cinnamon and vanilla and simmer another 5-7 minutes. Add more water if cereal seems dry.
